Odyssey Farm raised Grass-Fed Beef is available in Halves and Mixed Quarters as well as 25lb and 50lb boxes.
You get top quality beef sourced from genetic lines that have been supplying the farms that supply Chicago restaurants.
Odyssey Farm becomes more regenerative in the process with managed grazing that improves our pastures, soil health, and doesn't require grinding feed. And yes, the steers in the banner photo are this season's grazing team.
25lb and 50lb Boxes of Beef:
Both boxes will include a mix of Steaks, Roasts, and Ground Beef. Some specific cuts -tongue, liver, oxtail, etc, available upon request.
25lb box is $265 and requires a $50 deposit to Odyssey Farm upon order. A 25 lb box is about 1 cubic foot of space or 1 standard milk crate.
50lb box is $495 and requires a $100 deposit to Odyssey Farm upon order. A 50 lb box is about 2 cubic feed of space or 2 standard milk crates.
Half or Mixed Quarter of Beef: (Processing dates for Sept 2023)
How It Works:
Call or email Odyssey Farm to order your half or mixed quarter of beef. I will confirm your order via email when I receive your $250 deposit —check made out to Odyssey Farm, LLC.
Quick Breakdown:
Our grass fed Black Angus/Red Brangus/Murray Grey Crosses finish out between 1,000 and 1,200 lbs. These are very “ballpark” figures.
Ordering mixed quarter will give you around 110 lbs of take home meat. You pay Odyssey Farm for the beef based on the hanging weight of the carcass and then pay the processor the fees for slaughter, cutting, grinding, and packaging the meat -also based on a hanging weight base fee.
Before your animal is processed, I will ensure we talk through the Northern Trails Meats Cut cutting instructions so you get exactly what you want out of your order.
The Details:
Here's an example cost and yield breakdown for an 1,100 lb steer.
The hanging weight of the carcass before cooling will be about 682 lbs. The mixed quarter hanging weight would be 170.5 lbs.
You'd pay Odyssey Farm $4.45/lb for the hanging weight. $4.45 x 170.5=$758.73 to Odyssey Farm.
You'd pay Northern Trails Meats $42.50 for slaughter and $.85/lb hanging weight for processing.
$42.50 + $144.93 = $187.43 for processing (if you don't opt for the additional $.50/lb for plastic-wrapped, cryovac packaging)
$758.73 to Odyssey Farm plus $187.43 to the processor equals $946.16 for 110 lbs of take home meat. That's $8.60/lb for grass-fed beef bred and born on one organic farm and finished on another using organic practices.
110 lbs of meat will take up just over 4 cubic feet of freezer space -about four and a half standard milk crates of volume.
